Ingredients

1 lb salmon fillet
2 cups sushi rice
1/4 cup rice vinegar
1 avocado, sliced
1 cucumber, julienned
2 tbsp sugar
1 tsp salt
4 sheets nori seaweed
1 tbsp sesame seeds
Soy sauce, for serving
Pickled ginger, for serving
Wasabi, for serving

Instructions

  1. Cook sushi rice according to package instructions.
  2. In a small saucepan, combine rice vinegar, sugar, and salt. Heat until sugar and salt dissolve.
  3. Spread cooked rice onto a baking sheet, drizzle with vinegar mixture, and let it cool.
  4. Preheat oven to 350°F (175°C). Place salmon fillet on a baking sheet lined with parchment paper and bake for 15-20 minutes, until cooked through.
  5. Once salmon is cooked, assemble sushi by placing nori sheet on a bamboo rolling mat. Spread a thin layer of rice, then add salmon, avocado, and cucumber. Roll tightly and slice into pieces.
  6. Sprinkle sesame seeds on top and serve with soy sauce, pickled ginger, and wasabi.
